Use the leftover pumpkin and easy cook a delicious Pumpkin bread. You will need a cup of pumpkin pure which you can either get from a can, or you can make it yourself by steaming the pumpkin pieces then take out the flesh and blend it in a food processor. This wonderful recipe use some nuts, but you can make it without them or replace them with almonds, the taste will be almost the same.
