Although I've already put together a team to make a game with some aspects of this (see U-Universe in sig) I think it would be awesome if they released an official mobile version of Little Big Planet for iPhone/iTouch.
Sony owns LittleBigPlanet, and Nintendo owns Pokemon, so those wont be on the iPhone. I would love to see some better rythm games. TTR3 is a great step in the right direction, but I'm hoping that Rock Band is better.
Gameloft will most likely make games called BigLittleWorld and Pokemonsters before it is all said and done
a CRPG, proper turn-based RPG like Fire Emblem, a good survival horror game, a Tenshu-style stealth game, and a move/combo-based action game similar to Devil May Cry or Muramasa that has fluid gameplay unlike the one-screen-per-stage scheme of Hybrid.
It may not be exactly what you're looking for, but your description of a "move/combo-based action game" reminded me of Samurai: Way of the Warrior. You might want to check out the lite, if you haven't already.
I already have that game. Can't say I like it that much, sometimes it gets frustrating trying to attack when all the character does is move, and vice-versa. And the blue screen fatal bug is apparently still there.
The blue screen bug is not there anymore, not since the most recent upgrade to 1.1. Never had a problem with the interface failing to recognize a tap from a swipe, and I've completed it several times already, since I beta tested the update. You might want to check it out again. Also, take a look at the Samurai thread if you have game play questions -- there's plenty of fans willing to help.
Needs more Big Name developers and Big Name franchises on it. The PSP and DS get most of the mainstream titles, while the Iphone/IPod gets the leftovers. Hopefully more franchises are brought in from the Japanese developers, as I love JRPG's like crazy and also wouldnt' mind seeing Fallout and Elder Scroll series from Bethesda too.
I would really like to see some castlevania, final fantasy 1,2,3, actraiser 1,2, devil may cry, and resident evil 2.
I really want a real GTA game, like Chinatown Wars that Rockstar announced months ago, but haven't given us any news on it whatsoever.. same with Rat Rod and Mike V Do or Die. I want those games badly, but I guess I'll just have to wait. Other than that, I wish for N+ and Monster Jam.

Phantasy Star IV would be pretty amazing, and I can't see why it wouldn't work. One of my favorite JRPG's.
