I got the Yak-3-1 and I really like it. It seams more stable than the Z3 when I am behind someones six ready to take the shot.

It does take a bit more than the Z3 to turn though.

Firepower of each plane wrt Z3:
    Zero-III --- 10.0
    Yak-3-I --- 9.1
    Mustang-II --- 8.9
    P38-L-I --- 8.9
    BF109-II --- 8.6
    Mossie-II --- 8.6
    FW-II --- 8.4
    Hien-II --- 8.4
    Corsair-II --- 8.0
    Spitfire-II --- 8.0
    Yak-3-II --- 8.0
    Zero-II --- 7.7

This is the armor of each plane with respect to P38-I based on Cometti's report:

    P38-L-I --- 10.0
    Mossie-II --- 9.2
    Zero-III --- 8.7
    BF109-II --- 8.7
    Hien-II --- 8.7
    Yak-3-I --- 8.2
    FW-II --- 8.2
    Spitfire-II --- 8.2
    Mustang-II --- 7.6
    Corsair-II --- 7.6
    Yak-3-II --- 7.6
    Zero-II --- 6.6

Max speed after burnout and min speed before stall
    Zero-III --- 640km/hr - 110km/hr
    Yak-3-I --- 600km/hr - 110km/hr
    Mustang-II --- 590km/hr - 110km/hr
    Hien-II --- 590km/hr - 130km/hr
    FW-II --- 570km/hr - 110km/hr
    Corsair-II --- 570km/hr - 150km/hr
    Zero-II --- 570km/hr - 110km/hr
    Mossie-II --- 550km/hr - 150km/hr
    Yak-3-II --- 550km/hr - 150km/hr
    Spitfire-II --- 530km/hr - 130km/hr
    BF109-II --- 530km/hr - 130km/hr
    P38-L-I --- 510km/hr - 170km/hr

Plane name (market spec in handling): Pitch 5 rev / Roll 10 rev / Yaw 1 rev (5 rev means time taken to complete 5 revolutions).

    Zero-III (5.0): 17 / 16 / 17
    Yak-3-I (4.5): 20 / 18 / 24
    Mustang-II (4.5): 20 / 18 / 24
    Hien-II (4.5): 21 / 19 / 26
    FW-II (4.5): 21 / 18 / 30
    Zero-II (4.5): 21 / 18 / 24
    BF-II (4.0): 20 / 20 / 28
    Yak-3-II (4.5): 21 / 19 / 26
    Corsair-II (4.5): 21 / 19 / 26
    P38-I (4.0): 22 / 20 / 26
    Mossie-II (2.5): 22 / 20 / 28
    Spitfire-II (4.0): 22 / 20 / 28

    So the best in overall manuverability is Z3 > (Yak3-I = P51) > Z2 > (Hien-II = Corsair = Yak3-II) > (BF = FW) > P38 > (Mossie = Spitfire) .

Body length defines the target area. Wingspan is not part of the target according to the game developer.
    From shortest to longest:
    Yak3 - 27ft 10in
    Hien - 29ft 3in
    BF - 29ft 4in
    Zero - 29ft 8in
    Spitfire - 29ft 11in
    P40 - 31ft 8in
    Mustang - 33ft 3in
    FW - 33ft 5in
    Tempest - 33ft 7in
    P38 - 37ft 9in
    Mossie - 44ft 6in
    Corsair - 46ft 1in

After considering all the factors(pitch, roll, yaw, firepower, armor, max speed, min speed, body length), the best dogfighters would rank as follows:
    Zero-III > (Yak3-I, BF-II, P38-I, Mossie-II) > (Mustang-II, Hien-II, FW-II, P38-II) > (Spitfire-II, Zero-II, Yak3-II, Corsair-II) > (Mustang-I, Tempest-II, Mossie-I) > (P40-I, Tempest-I, Zero-I, Corsair-I, FW-I, Hien-I, BF-I) > (P40-II, Spitfire-I)

    P38

The P-38 is my favorite, by far, the armor comes In handy.
#1 in a perfect head on pass, the p38 will destroy any plane but the wooden wonder.
#2 in the hands of a skilled pilot, the P-38 CAN outurn a Zero, you simply deploy flaps and do an immelman turn.
#3 being slower is no disadvantage, I have had several Zeros overshoot me, plus running is for wimps ;)
#4 Being painting in Kamikaze colors sounds like bad Ju-Ju to me.....

Edit: Also, note the concentrated firepower
