I was browsing Reddit and found the "You're going to hell" subreddit... hate to admit it, but I have laughed at at least a few of these posts. Some absolutely not (anything dealing with domestic abuse, misogyny, racism, Sandy Hook), but there are a few comedic gold nuggets to be found, for sure! Chromosomes are, I believe, genders. Everyone has either an X or Y chromosome, which makes them a male or female. Potatoes have both male and female parts in them, like all plants, so it's referring to that
It's offensive, because well look at the link you posted. They explain it, they even post pics explaining it. Hoggy was trying to explain how potatoes have more chromosomes, but not the joke lol. What a potato.
Potato is internet slang for people with Down's syndrome, prob started on 4chan. The joke is that it's unintentionally putting people with down's and humans in separate categories. Anyway there's your answer. Probably shouldn't have explained. ... Probably should lock this before it gets out of hand.
