Bumping something is when you hit it but don't fall over/lose the game - you stumble, then the security guard and his dog appear right behind you again. If you bump anything when the guard's on screen he automatically catches you. It can be tricky to bump barriers or hedges because you have to jump at just the right point, but to bump trains you can just slam into them from the side (try and change lanes when there's a train there).
To bump bushes, just run into them. You will never get killed by the bushes. It is the easiest thing to do. To bump trains, just hit them from the sides, not difficult either.
Hi guys, just to clarify. You still get the multiplier increase even if you are skipping the missions. So skipping won't keep you from going for a high score.
In my opinion, it doesn't have sense. For example, there was a mission to collect or spend, let's say, 5000 coins. Instead of this we can skip this for 1500 and get the same award.
This makes a lot of sense to me. When you collect coins, you have more of them. Skipping the mission reduce the number of coins you have. When you spend coins, you can use them on something useful, like an upgrade. Skipping the mission makes you spend 1500 coins for nothing besides completing a mission.
Incorrect. I just passed a friend on my leaderboard and did not get credit for that mission. It's either a glitch right now or you need Facebook to get that challenge. I don't have Facebook.

7x is your multiplier. The higher your multiplier the easier it is to get a good score. You increase your multiplier by completing missions.
