You could try a drag-switch instead of a tap-switch, except I think that's particularly hard on a smaller device. You probably need an iPad if you're going for dragging rather than tapping. Otherwise, if you can play with your iPod flat on the table, or propped up against a stand of some kind, that may help if your right hand isn't actually holding it up.
