I guess the music and pedestrian sounds were the only thing cut given the already large 600MB+ uncompressed size once installed. By the way, is this the first iPhone game that uncompresses like this, and with a pretty decent compression ratio too consider a lot of it is cut scene images, textures, and sound which are already in a compressed format for the game engine.?

I believe the iPhone version only has 5 radio stations, which is the same number as the DS version. The PSP version came with 6 additional stations. Each station may also have had their music selection cut back or altered, but I'm not familiar enough with what the original stations are to tell.

Does it give you some sort of notification when you spell it out that you did it right? It didn't do anything for me.
It may be a restriction on Apple's part though... Probably not, but maybe Rockstar actually can't help it.
