EDGE, Saucelifter, Bejeweled 2, Real Racing, Eliss, Vector Tanks, Monster Pinball, I Dig It, Defender Chronicles, and BeatRider will never be deleted from my iPhone. This is really all the games I need on my iPhone in my opinion. The best from every great genre.
Well, these may seem a little bit shallow by other replies but here's my never-will-be-deleted list. - Backgammon - Solitaire City - Sudoku - Okey (a Turkish board game, and the first game I bought) Every other paid/free game on my iPhone are destined to be played, completed and deleted eventually. After all I choose most of my games based on having a story or progression. But these four, I will always come back to now and then and play for a quick fix on the run anytime.
Cutout Heroes: Making of a ninja and Cutout Heroes: Hangman . . . because I made them I just love shoving my iPhone in front of people's noses and saying : "I made this" (then looking around for a certain studio that could claim copyright for using that phrase) There is no better feeling of accomplishment
Probably just Uniwar and maybe Peggle. Everything else is always on the bubble. To be honest, unless a game has good online multiplayer, it'll probably be deleted at some point. Games without it can only last so long. Peggle may be an exception, though. We'll see.

cirquit_strike.one will survive all. I purchased over 400 games. All big ones are in my list. But I never played a single game that much. That makes it clear to me
Centipede is the one I always come back to. It will, it seems, never die... Probably Rogue Touch as well as I don't see myself getting the Amulet before I buy a new iPod Touch. And probably Scrabble, Word Fu or Wordabble, but most likely all 3 of them will stick around
