I don't know if you want not to use on-screen buttons at all, because if so this won't work, but Jet Car Stunts controls beautifully with the tilt function.
I actually dislike a lot of accelerometer-controlled games, because it often seems like a tacked-on gimmick, and too many developers forget the need for custom calibration.
But, Jet Car Stunts works incredibly smoothly. Also, I don't remember if it was mentioned, but the Glyder games would go well on your list.

Laby 2, starball, crazy turkey blast. Those are probably the best.

Glyders do not use buttons, they are controlled only with accelerometer and would fit your requirements very well.

That I've played and consider to have great accelerometer controls:

    Space Ninja
    Starball
    Dark Nebula
    Boost 3D
    Jet Car Stunts
    Doom Resurrection
    Cell War
    2079
    Globall
    Low Grav Racer 2
    Real Racing
    Sky Force

-Labyrinth 2 is supposed to great, but I haven't tried it yet.
-Tap Tap Revenge uses the accelerometer for just the "shake arrows."
-Cobra Command is a good game that has an accelerometer mode that I don't use.

Hey, thanks for adding Space Ninja already!

But another awesome accelorometer game: Enviro-Bear 2010! It doesn't use accelerometer at all, but it's still the best game ever!

    More: Doom Resurrection would work.

    Real Racing, NFS Shift

    Doodle Dive coming soon!

    Hey guys,

Just wanted to let you know about Doodle Dive. We spent a long time balancing and teaking the TILT controls so they feel just right. Check out the trailer!

    http://forums.toucharcade.com/showthread.php?t=57379&highlight=doodle+dive

We've got a thread going for the preview so I don't want to take up too much space here so I'll just insert the youtube link instead.

Let me know what you guys think,
