      Are there any apps that convert handwriting to text and save as a document?

      If you mean apps for a computer, then I think the ABBYY ScanTo Office Wizard does.

      I can write (and it converts to text) with my Wacom tablet.

      For computers or the touch interface? There are some on the appstore but unless you're using a stylus the legibility might not be great.

      Yes it is for an iPad, and a stylus would be used.
