Touchgrind wins hands down. Bit of a daft question really The App Store isn't exactly awash with good skating games but even if there were more of them it would take a lot for something to be better than Touchgrind. Touchgrind isn't just the best skating game, it is also one of the best games overall in the store. There are a select few games which have established themselves as iPhone/iPod classics in the past year, and Touchgrind is one of them - every device should have it
I've only played Touch Grind, but I think it's a bit hard to control. Never did get quite used to it, I should give it another go sometime.
