No, of course I wouldn't want that. I have a Lvl. 50 Wizard and Ninja and both aren't anywhere near invincible, nor should they be. I'm happy to see how destructive they can get, but I wouldn't want them invincible at any point. The problem I had with the Paladin/Barbarian was how very low the damage was. It was practically impossible to kill a single healer in the Arena. I've since mitigated that by mixing skills and passives better, and by luckily getting the legendary colossal weapon.
Well, I've gone through the whole game twice with my previous characters (the 1st was Lvl. 50 Wizard/Mage & the 2nd was Lvl. 50 Ninja), so doing it over again doesn't make much sense for me. Until the new content is out at least, in which case I might make yet another new character and redo everything from the start, or go the popular route and train until I can have a fully unlocked NG+. I don't really want the NG+ because I don't want to mix classes in ways which don't make sense from a common sense/background perspective - don't want to ruin my own game by power gaming. It's OK in the Arena now though. Mixed the skills a bit better, got better equipment (luck, mostly), leveled until 22 and problem solved.
A few levels can make a big difference. My monk build was struggling to get over 120 enemies in arena, then I finally allocated 10 levels worth of stats (30 points) split between Dex and Skl and my next run she got to 210 (and the first 150 weren't difficult). That's one reason your level 10 was struggling. Also, my Barbarian build was pretty solid at lv25 in arena (hitting 120 kills easily, and really that's all I cared about was getting a legendary drop). It was built around Whirlwind, Flame Sword, the battlemage sword spin attack with flame sword and the Paladin's Wrath (but that's an NG+ mixture). Regarding NG+ characters - there are some builds (which are mostly "background consistent") that rely on cross classing in strange ways but are really fun. One example that I've done is the Teleport Ranger - where you run a normal ranger skill bar (Apollo Shot, Barrage, Preparation etc) but put Teleport on the end (the wizard skill). It's a super fun build (and probably the best way to play *pure* range). Another, more sensible one, is a full pet build which mixes Necromancer, Witch and Ranger (and the Ranger mix-in makes it hard to do on a vanilla play through, and much easier on NG+ that already has Ranger skills). You use both pet passives (Rangers Leader and Necromancer's Army of Doom) to make your pets really effective, then the skills Summon Skeleton, Summon Wolf and Summon Mummy to maximize your pets (and I mixed in some Witch, specifically Whirlwind for some crowd control). Both were really fun to play (but only reasonable to do with NG+ runs). Also, I didn't get my full skilled character by leveling her to ~70 and buying all the skills, instead I played through (using NG+ each time) many times maxing out 2 trainers each run (and designing a build around the skills gained from those two trainers; but mixing in things I already had). This is how I discovered those two builds above, and did some fun things like Battlemage/Barbarian. When you already have some passives and skills to work with you can explore strange class pairings (like those two) without worrying too much about not getting enough healing/damage/crowd control balance to handle specific dungeons/bosses.
I don't think the colosseum is the best way to level up. I found a way to gain 420XP in less than a minute, obviously it will depend on what character you have, but with me I can do this: -Go to "The Lost Grotto", "The OOzing Dark" -Fight boss, the fight takes less than a minute and I just do this: 1-Power Infusion (inc 50% damage for 10 secs) 2-Blood Magic (Sacrifice 20% HP for 20% increase of damage and critical chance of 100%) 3-Chain Lightning 4-Blood Magic 5-Thunderbolt 6-Blood Magic 7-Drain Life 8-Blood Magic 9-Meteor that kills the boss, then the smaller creatures appear and it's just 9-Drain Life 10-Radiance kills them all -Win 420XP (I have +20% XP twice)
If the only XP Boosting that you have are the two +20% trinkets, you can also use Bard's Clothing (the low level armor which grants +10%) and the Bard passive that gives +10% (for a total of +60% XP). Using all of that will get your boss run up to 460XP.

Main attack skill is [Tornado]. (multi hit with passive impending doom) using [Premeditate] to double [Tornado] use [Victory Banner] to increase 50% crit chance use [smoke bomb] to get them to get near you Just spam [Premeditate] then [Tornado]. Try to get 100% crit with [Victory Banner].
Thanks a lot for the suggestions, really appreciate it. Both the summoner and the ranger sound like interesting plays that I might want to look into at some point. For now, I've maxed the Paladin to the point where there's nothing much more to do (Level 45, can beat everything easily now) so I'll probably start a new Witch/Necromancer character. If they release a substantial new content update like a DLC, I'll probably make a full NG+ character before digging into it.

Does anyone know a good way to level up past 30 without using the Arena? I'm trying to max out 1-2 jobs every reset. I'm on my first one and I'm doing Battlemage and Wizard, leveling up is just a chore now, and I can't kill faster than my Paladin/Ninja, any tips? Or should I just re-roll?
That's natural. Battlemage is versatile but an underpowered playstyle in NG+ as the game is now. As for good ways to level up, I suggest chop down chaos tower bosses for quick 800 xp, if you do it right, should be under 30 sec. And link is in my post above the same page.
Yeah also equip some exp trinkets. You'll need to grind a little more than usual with the battlemage. I hope they buff them in the near future
This must be the longest a game has hung around in the TA charts, although MH might hang around for a good while too!
