I had to read this thread because it's about bacon! I applaud your bacon weaving skills LBG. I cook about five to six slices of bacon in a cast iron skillet. Remove bacon slices, change heat to high, and throw on some steaks (New York strip or rib eye) to give them a good sear. Reduce heat to medium. Add 1/4 - 1/2 a stick of butter to melt and create a butter sauce. Bathe steaks in butter sauce. Remove steaks. I throw in some shallots and rosemary at the end to flavor the butter/bacon fat sauce. Let the flavors carmelize a bit. Turn off heat and serve. I save all my bacon drippings (grease) and keep it in the fridge. I use it in place of olive oil to saute food. Really yummy for making carmelized onions. A lot of people in San Francisco eat like this, and you would think we would be horridly obese, but there are all these really steep hills we have to climb just to get anywhere. I know American bacon is nothing like bacon in the U.K. and every Brit I know hates American bacon but...I find American bacon vastly superior.
Thanks. That bacon and steak recipe sounds amazing. I'll have to try that sometime. I haven't tried American bacon, but I'm happy enough with my British Bacon. A very sad day in the land of Mr Crazy. I would suggest going on a mission to find bacon, but it's probably a bit late now. Maybe for the future you should keep a pig in your garden and every time you need bacon, just slice a bit off.
