I think Apple employees find good projects themselves. You need to improve visibility of your projects. You also should follow their guidelines and analyse games they usually feature and give annual awards to. Visiting some meet-ups or conferences Apple employees visit will increase your chances to be selected. IMHO
You can also try to send an email to developers of Apple Arcade games. Every single developer. Probability theory should work Good luck
