Suggestion would be to be able to double tap on plane to slow down speed by half. Or perhaps loop where instead of slowing down they instead would do one tiny loop to delay then resume their designated course of path. Add some jet fighters that go like 25% faster. Also if near very edge of screen maybe put both into half speed if collision detection is beeping. Maybe do a slow mo mode for 3 secs like space ninja where any planes with collision detection we could circle them with our finger and redraw their routes.
