The way the IAP currently works is that as you defeat a given opponent the first time, you unlock a checkpoint allowing you to start from that opponent. But you need the 'upgrade' IAP in order to actually use unlocked checkpoints. You can also unlock computer wrestlers and play as them, but in order to do that you need to do following: to unlock Chen Lee, beat all the main wrestlers (including Beardo) with Tommy. to unlock Mad moose, beat all the main wrestlers with Chen to unlock El Diablo, beat all the main wrestlers with Mad Moose. etc. And again you need the 'upgrade' IAP in order to actually use unlocked wrestlers in normal game mode. The above isn't obvious, and has caused some confusion. I will likely update in next days to make it much easier to unlock computer opponents - reach opponent to unlock checkpoint, beat them to unlock wrestler.
