You haven't searched enough then. There are quite a few decent themes out of the hundreds of crap ones. Macthemes and ModMyi have plenty.

Themes should work fine now, just don't overdo it with flashy animations and the like or it'll actually take up your iPod's memory. :)

No, upgrades aren't supported on iPod. You have to use iTunes. There are alternate ways. I will not say anything though. o_o
