It could be because other people are using up mana for there own towers leaving you with less mana to use on your own strategy which you know works.
Either store extra mana while playing (while in build mode) or collect lots of items and sell them once you get back to the tavern.

Both, there's a lot of different ways to complete each map but you'll probably find one way you like the best.
